Pulled 22 weeks of Toast Weekly Performance Summary emails for one location, charted Net Sales against Hourly Labor Percent for Wednesday and Thursday, and isolated a single mid-April week where Wednesday labor hit 51.7 percent on $1,597 in sales. Thursday consistently outperformed Wednesday on labor in 16 of 20 non-holiday weeks. The chart now feeds the weekly manager review.

A La Jolla kitchen started spilling smoke into the dining room after years of hood and blower modifications. Walked the problem back to a makeup-air imbalance, exhaust CFM had been quietly reduced over years of repairs while makeup air stayed constant.
